Lemon Blueberry Waffles
Ingredients
- 2 c whole wheat flour
- 1 t salt
- 1 T baking powder
- 2 T dark brown sugar
- 1 t cinnamon
- ½ t nutmeg
- ¼ t allspice
- 6 T unsalted butter
- 2 eggs
- 1.5 c 1% milk
- 2 t vanilla extract
- ¼ lemon zested
- ½ lemon juiced
- 1 c blueberries
Instructions
- Preheat waffle maker. Sift and combine flour, salt, baking powder, brown sugar, cinnamon, nutmeg, and allspice
- In separate bowl, melt butter.
- Whisk eggs into melted butter. Add milk, vanilla, lemon zest, and lemon juice to bowl. Stir till combined.
- Add wet ingredients to dry ingredients. Mix until just combined.
- Fold in blueberries.
- Spray waffle iron nonstick spray, Cook waffles in waffle maker per your waffle makers’ instructions. (2-3 minutes normally)
- PRO TIP: hold waffles in oven at 200 F to keep warm while making the rest of them to keep them warm and not soggy.
