Lemon Blueberry Waffles

Ingredients
  

  • 2 c whole wheat flour
  • 1 t salt
  • 1 T baking powder
  • 2 T dark brown sugar
  • 1 t cinnamon
  • ½ t nutmeg
  • ¼ t allspice
  • 6 T unsalted butter
  • 2 eggs
  • 1.5 c 1% milk
  • 2 t vanilla extract
  • ¼ lemon zested
  • ½ lemon juiced
  • 1 c blueberries

Instructions
 

  • Preheat waffle maker. Sift and combine flour, salt, baking powder, brown sugar, cinnamon, nutmeg, and allspice
  • In separate bowl, melt butter.
  • Whisk eggs into melted butter. Add milk, vanilla, lemon zest, and lemon juice to bowl. Stir till combined.
  • Add wet ingredients to dry ingredients. Mix until just combined.
  • Fold in blueberries.
  • Spray waffle iron nonstick spray, Cook waffles in waffle maker per your waffle makers’ instructions. (2-3 minutes normally)
  • PRO TIP: hold waffles in oven at 200 F to keep warm while making the rest of them to keep them warm and not soggy.
