Chicken Parmesan

Ingredients
  

  • 2.25 lb boneless skinless chicken breast
  • 3 T olive oil
  • ½ c panko bread cumbs
  • 12 T tomato sauce
  • 0.75 c shredded mozzarella cheese
  • 0.25 c shredded parmesan cheese

Instructions
 

  • Preheat oven to 450 F
  • Salt and pepper chicken breasts
  • Set up breading station by pouring oil in one bowl. Pulse bread crumbs and parmesan in food processer and then pour into a separate bowl.
  • Bread chicken by dipping chicken in oil and then the bread crumb mixture
  • Place breaded chicken on sheet pan.
  • Baked for 25 minutes on one side and then flip and bake for 5 more minutes.
  • Top chicken with 2T tomato sauce and 1T shredded mozzarella
  • Bake for 3 more minutes until cheese is melted. Chicken internal temperature should be 165 F before eating.
