Chicken Parmesan
- 2.25 lb boneless skinless chicken breast
- 3 T olive oil
- ½ c panko bread cumbs
- 12 T tomato sauce
- 0.75 c shredded mozzarella cheese
- 0.25 c shredded parmesan cheese
Preheat oven to 450 F
Salt and pepper chicken breasts
Set up breading station by pouring oil in one bowl. Pulse bread crumbs and parmesan in food processer and then pour into a separate bowl.
Bread chicken by dipping chicken in oil and then the bread crumb mixture
Place breaded chicken on sheet pan.
Baked for 25 minutes on one side and then flip and bake for 5 more minutes.
Top chicken with 2T tomato sauce and 1T shredded mozzarella
Bake for 3 more minutes until cheese is melted. Chicken internal temperature should be 165 F before eating.
